I was really upset at the BAD advice that was given about wedding cakes and I hope this will make them think twice in the future about the advice they give in public about our great profession. The entire cake community was excited to see that you would be featuring our industry on your show today, and we all tuned in to watch the program. However, I felt compelled to write you on behalf of many in the industry to tell you we were somewhat dismayed by many of the assertions made on the segment that aired. I would like to explain some of the areas that we felt were incorrect, and in some cases dangerous. •To put a ribbon on your fondant cake, wrap it around and pin it with dressmaker’s pins.” This advice is extremely dangerous as pins could result in severe injury or even death if they are not removed prior to serving the cake. The correct method is to use double stick tape so that nothing touches the cake but the ribbon. Then, the ribbon is safely removed prior to serving. *Sugar flowers cannot go on a fondant cake because there is no way to push them in. We sell several products that are designed to safely display the beautiful sugar that the legions of talented cake designers are creating for just this effect. Sugar flowers are the gold standard in wedding cake design and there is an entire industry dedicated to designing, creating and displaying them. This type of mis-information is detrimental to the talented artists who are making a living creating this beautiful work. Furthermore, cut flowers can be hazardous as they are often sprayed with pesticides and must be sourced incredibly carefully. •Cake dummies can reduce the cost of a wedding cake. Cake dummies can be used when the bride and groom would like a dramatic presentation that serves less guests, or when they would like to keep one of the layers as a memory of their special day. The price of a wedding cake is based on a formula that takes into consideration the hard cost of materials in addition to the time and talent that is being dedicated to making the couple’s day special. Everyone has a budget, but for a bride and groom who want a truly spectacular cake, they are paying for the time and talent of their cake designer in addition to the eggs, butter and sugar. Shows like yours have incredible impact on your audience, and we were delighted that you highlighted our industry. However, I can only ask as a professional working in this industry that in the future you do a bit more research by talking to some of the members of our community and presenting a clearer picture of what a beautiful and professionally created wedding cake really entails. We would also ask respectfully that some of the more dangerous assertions like the dress pins be corrected on air and on your website as that advice could create a health hazard for your viewers.
