Woke up early enough to do some experimental cooking. I made Mexican Beef Stew yesterday so what I did was made up some tortilla mix, got a ladle full of the beef & veggies with just a little soup and I mashed it up, added mozzarella and a Mexican taco blend cheese to the mashed up soup and stirred it together, I made the tortillas and stuffed them with the cheese and soup mixture using my empanada maker and I deep fried them until golden brown.. OMGosh!! They were awesome and Jesús liked them too.. Ive decided that will be supper tonight with just a couple of little tweaks, a spicy red salsa and some Mexican powdered white cheese for dipping.. This experiment will for ever be known as Quesanadas
