Worlds Greatest Meatloaf. 1 egg 1 tsp. salt 1/4 tsp. pepper 1/2 tsp. basil 1/2 tsp thyme 1/4 cup ketchup 2 tsp. prepared mustard 1 1/2 cups bread crumbs 1 can diluted beef broth (I usually use a beef bullion cube with water to make a cup) 1/2 cup chopped celery 1/2 cup chopped onion 1 cup shredded cheddar cheese or swiss 2 lbs ground beef That said, I usually vary spices, cheeses, and sometimes I use some beef, turkey, pork, veal, etc. Beat egg. Add salt, pepper, basil, thyme, kechup, mustard and bread crumbs. Warm soup (I usually do the beef bouillon in the microwave for a bit), add and mix until blended. Mix in celery, onions and cheese. Break up beef (or other meats) and add to bowl. Mix lightly. Place in loaf pan. Bake uncovered at 375 for about an hour to an hour and 10 minutes. There will be lots of fluid (even if you use a meatloaf pan with the holes) which I drain off (its grease from meat, and cheese, and excess broth). YUM!!
