Poached Pears Makes: 6 servings Looking for a holiday dessert other than pie? This dessert is delicious, satisfying and fairly low-calorie. In addition, pears are very high in fiber, aiding in digestion; especially if you leave the peel on. This recipe is also great to use up that wine you aren’t crazy about. Healthy Tip: be aware of how much calorie-dense ice cream you add to this dessert; a couple dollops should more than satisfy your craving and complement the dish. Ingredients: 1 ¾ cups dry red wine 1/3 cup honey 1/2 cup water 4 teaspoons grated orange peel ¼ teaspoon peppercorns 1 teaspoon ground cardamom (optional) 1 teaspoon cinnamon 1 teaspoon vanilla extract 6 firm but ripe pears, peeled, cored and halved Optional: vanilla ice cream as a topping Directions: In a large heavy pot, combine wine, water, honey, cinnamon, vanilla, peppercorns, 2 tsp. orange peel and cardamom if desired; bring to a boil. Reduce heat and simmer, covered, until honey is dissolved, about 5 minutes. Note: for a thicker syrup that you can spoon over the pears, reduce the water by half. Place pear halves in syrup; cover pot and poach over a low heat, turning pear halves occasionally. After about 10 minutes, test for doneness with a fork: pears should be just tender. Poach longer, if needed. The timing will vary depending on variety and ripeness of pears. Let pears cool in wine sauce; turn them once or twice while cooling to give them a nice even color. Sprinkle with remaining 2 teaspoons zest before serving.
