COCONUT *PSEUDO-BUTTER* ……. I think I need to share this to some people who maybe trying to avoid dairy products like me and missing those food that taste better with them. I’m talking about butter and how I’ve been missin, for example, buttered toast and jam for breakfast. Some people I know substitute those plant-based margarines made from canola or sunflower oil. My problem with these commercially made margarines is they contain soy bean derivatives that I also avoid. More so, if you read carefully their labels you’ll find out they’re not in fact 100% dairy-free. Today I discovered that coconut oil is an excellent substitute for butter or commercial margarine. A week ago I made some coconut oil which I’ve begun using as skin moisturizer in place of those commercial products I used before. From a kilo of fresh pure coconut milk I bought in the local market I made about a cup of oil. Coconut oil turns rancid fast so I put just about a quarter of it in a small jar for my daily use. The rest I kept in another jar inside the fridge. I knew even before that coconut oil hardens (solidifies) quickly in low temperature but never occurred to me that solid coconut oil could be eaten and taste as good as butter. When I opened the fridge to make breakfast this morning the wild idea came to my head. On toasted bread I put about a teaspoon of the solid coconut oil. With warm bread it melted exactly like butter. Then I put my favorite blueberry jam. Perfect! And more…. on my way back from school I bumped onto a boiled sweet corn peddler on a bike. I bought two cobs and had them for my late afternoon snack, rubbed with my coconut ‘butter’ and dipped in a mix of salt, pepper and lime (I learned this way of eating corn from Pakistani friends long ago). Wonderful taste! Not only that, I’ve read before there many health benefits of coconut oil. Grateful, now I can eat again ‘butter’ and still be healthy.
