YOUNGBERRY ICE CREAM RECIPE FROM : LITTLE YUPPIES PRE-SCHOOL (MOKGEDI MAKALE) INGREDIENTS : 2 LITRES VANILLA ICECREAM 410G RHODES YOUNGBERRY JAM 100G PISTACHIO NUTS (CHOPPED) 30ML CHOPPED MINT LEAVES 100G DARK CHOCOLATE (CHOPPED) EXTRA FRESH BERRIES CHOPPED CHOCOLATE FOR DECORATION DIRECTIONS : LINE A BREAD TIN WITH CLING-FILM AND COAT WITH NON-STICK COOKING SPRAY. REMOVE THE ICE CREAM FROM THE FREEZER AND LET IT STAND FOR A FEW MINUTES TO SOFTEN BEFORE SCOOPING IT INTO A LARGE MIXING BOWL. USE A WOODEN SPOON TO MIX IT UNTIL SOFT. MIX THE YOUNG BERRIES, NUTS, MINT AND CHOCLATE INTO THE SOFT ICE CREAM AND POUR INTO THE PREPARED BREAD TIN. FREEZE THE ICE CREAM OVERNIGHT OR UNTIL HARD. SPOON THE ICE CREAM INTO GLASS BOWLS AND GARNISH WITH EXTRA BERRIES AND CHOCOLATE.
