Yesterdays challenge - I did not work out. I tend to do things obsessively, and I started a book Sunday, so I kind of forgot the real world existed for a couple days while I devoured that. Dinner was a whole avocado and homemade chicken noodle soup, with a berry milkshake for dessert. We cooked up one of our homegrown chickens in the crockpot for dinner Sunday night and started the stock boiling Sunday evening. I save my veggie scraps in a mason jar in the freezer (celery tops, carrot and onion peels, etc) and add them to the pot as well for extra flavor. Then last night it just had to be strained, and into the broth went a jar of carrots that we had put up from last years harvest, the leftover chicken, and some egg noodles. Dessert was a berry milkshake (lots of berries, a splash of milk, and just a little ice cream). Delicious, filling, not too heavy. The flavor of homemade soups is so much better than the store bought stuff, and theyre pretty easy too. Plus, you know exactly what youre eating, and for us, exactly where the chicken and veggies came from. No assembly line scraps in my soup, thank you very much!
