Youve been obsessing over it, here it is: Our... FEATURED CHEESE OF THE WEEK Caña de Oveja • Murcia, Spain We love our sheep’s milk cheeses at AWM. We also love soft, gooey bloomy-rind cheeses. (I mean, who in their right mind doesn’t?) It’s not often that you find a cheese that covers both categories, so you can imagine how delighted we were to stumble across Caña de Oveja. Caña (or Kanye, as we’ve been calling it) is a lot like a Spanish take on a classic French Bûcheron, except that it’s made from sheep’s, rather than goat’s, milk. Aged about 21 days, the rind carries a plush, snowy bloom and has that slight bit of fleshy, tensile give that great Camemberts have, and a luscious and very distinct cream line just beneath. Toward the center the paste runs from creamy to chalky and carries all those sea salt / sweet pea / truffle notes that got us hooked on sheep’s milk cheeses in the first place. First impulse says to pair this with a Sauvignon Blanc, but I think Domaine des Deux Puits 2012 Muscat Sec from Roussillon is an ever better match — or anything from our sparkling list.
