_PORRIDGE PLANTAIN_ Ingredients: Unripe plantain Fresh scent leaves (Ugu could be an alternative) Crayfish (grind) Smoked, frozen/ dry fish A measure of cow liver or kidney Palm oil 1 medium size diced onions Grind fresh pepper seasoning salt to taste METHOD: Step 1: Wash plantain in warm water, cut off both ends and soakin water for 5 minutes for easy peeling. pluck, wash and slice the vegetable. Peel the plantain skin and cut into desirable size. Step2: Cook the plantain for about 10- 20 minutes. Step3: Add dry fish, chopped kidney/ liver. Add salt, crayfish, pepper and diced onions.Allow toboil on medium heat for about 10-15 minutes. Step4: Add palm oil, stir and steam for 5 minutes. Step5: Add vegetable, stir, and allow steam for another 5 minutes.... Serve....
