another great recipe using cauliflower is 1 bag frozen cauliflower chunks (could adapt recipe to fresh but for me this is easier), 1 pkg nuetzel (not spelled right but you know what I mean hehe) cream cheese, chopped onions, garlic powder, shredded colbyjack cheese, paprika. I usually microwave the frozen cauliflower for 2 minutes. then microwave the cream cheese to soften. put cauliflower in a large bowl and use flat spatula to chop into littler pieces. add both cheeses, onion, garlic powder and mix well. put in casserole pan and top with a little paprika cook at 350 for about 20 minutes.....it is super good and is pretty darn close to cheesy potatoes! got this from when I was on the south beach diet even my junk food junkie son inhales this stuff
