darcydiva How Is Everyone Doing Out There? Ohhhhh Happy Wednesday To All Of You!!!! Wow, its cold outside this morning, burrrrr, so dont forget to grab your coat on the way out the door!! On your way to get your morning coffee, purchase another for someone you know who would appreciate it, and make their day!!! Are you overwhelmed with things you know you need to get done, but the very thought of it all keeps you from doing anything? It may be a closet or room you need to clean out, that doctors visit you need to get out of the way, starting on Christmas early so you dont get overwhelmed, or you might need to lose a few pounds, or maybe even visit someone who has hurt you (they may not even know youre hurt). This is the key to getting started, make a list of things you need to accomplish by the first of 2014 and then just make it a goal to do something on the list every day!! It might be to do a section of your closet or room at a time, until its complete. To lose a few pounds just cut out a few of those treats, drink some water (instead of sugary drinks) and get some exercise (one step at a time). To get started on your Christmas purchases, again, make a list and then each time youre out doing some shopping or doing errands make it a priority to search for something on your list until its complete. I make candy every year for Christmas and I make it a point to start in October so that Im not running myself ragged trying to get it all made, packaged and then delivered in December!! That sure works better for me (spacing out the things I need to do) than waiting till the last minute!! Planning ahead is a habit, just like most things, so lets get started on that To Do List Today and before you know it, youll be looking at a completed page!! Now Go Get To It!!!! LOL Ive had several people ask me about Gluten Free recipes, so heres the first one on my list. I would recommend you read the website articles below before you decide if Gluten Free is best for you. The first one is What Is Gluten Free (just in case you didnt know) and the second article talks about if you should eat Gluten Free or not. Check them both out before you jump on the band wagon! This Gluten Free Brownie recipe below is delish, so give it a try and tell me what you think. Ok, Have A Super Day And Go Have Some Fun In The Kitchen, But Make It Quick, Youve Got Some Life To Live!!! Darcy Diva Gluten Free Homemade Fudgy Brownies 4 tablespoons (1/2 stick) butter 1/4 cup milk (cow, almond, rice, soy or other) 8 ounces (or about 1 1/3 cups) chocolate chips 1 cup sugar 3 eggs 1 teaspoon vanilla 2/3 cup sorghum flour 1/3 cup tapioca starch (for lighter brownies) or quinoa flour (for heavier brownies) 1/2 teaspoon xanthan gum 1/4 cup cocoa powder 1/2 teaspoon salt In a double boiler, melt the chocolate, milk and butter together. Set the chocolate aside to cool slightly. Whisk the sugar and eggs together in a large bowl. Whisk in vanilla. Combine the dry ingredients in another bowl, whisking together. Stir the chocolate mixture into the eggs and sugar. Then, fold in the dry ingredients. Be careful not to mix too much. Pour into a greased 7x10 pan and bake at 350 for 35-40 minutes. You could also do the toothpick test to find out if they are done. They will be a little flaky on top, and you should let them cool for a little bit. It takes me some serious will power to leave them sitting. You can even top them with powdered sugar to make them party-pretty. What Is Gluten?
