the first standard for composing was probably using a Roland U110 later a Roland MT32 then the Roland Soundcanvas which then became the base for General MIDI GM standard , later that standard got expanded upon Yamaha came up with XG/Gm and Roland GS/GM ? Mostly it would have been converted from a MIDI file into a tracker type interface, There were combined tracking and MIDI systems way back as far as 1990 youtu.be/OlspnqVcJho : tracking is typically using a hex based text interface to arrange samples, there is a modern DAW/Tracker called Renoise . Games systems like the Dreamcast have a DSP and 64 Channel dedicated audio processor so making MIDI tracks and bumping them into games is quite straightfoward.
