this was dinner tonight... Forget the flu shot. A soup based on more than 50 cloves of garlic, onions, thyme and lemon will destroy almost any virus that enters its path including colds, flu and even norovirus. Modified Garlic Soup Recipe.... Serves 4 A. 26 garlic cloves (unpeeled) 2 tablespoons olive oil salt to taste B. 2 tablespoons (1/4 stick) butter 1/2 teaspoon cayenne powder 1/2 cup fresh ginger 2 1/4 cups sliced onions 1 1/2 teaspoons chopped fresh thyme C. 26 garlic cloves, peeled, raw D. 3 1/2 cups organic vegetable broth (I used 6c. turkey broth) E. 1/2 cup coconut milk ~4 lemon wedges~ 1. Preheat oven to 350F. Place A. in small glass baking dish. toss to coat. Cover baking dish tightly with foil and bake until garlic is golden brown and tender, about 45 minutes. Cool. Squeeze garlic between fingertips to release cloves. Transfer cloves to small bowl. 2. Melt butter in heavy large saucepan over medium-high heat. Add B. and cook until onions are translucent, about 6 minutes. 3. Add A. and C. and cook 3 minutes. 4. Add vegetable broth; cover and simmer until garlic is very tender, about 20 minutes. 5. Working in batches, puree soup in blender until smooth. 6. Return soup to saucepan, add E. and bring to simmer. Season with sea salt and pepper ~Squeeze juice of 1 lemon wedge into each bowl and serve~ Can be prepared 1 day ahead. Cover and refrigerate. Reheat over medium heat, stirring occasionally.
