البلورية الحمراء Red Baloria: 500 gm. shredded dough ( kinafa) 1 cup butter or Gee 2 cups chopped pistachio For the Syrup: 2 cups sugar 1 cup water ¼ cup golden syrup ( glucose) 1 Tsp. lemon juice Put all syrup ingredients in a heavy small saucepan and mix well, boil few minutes, until it thickened and gets golden color, remove and cool. Melt butter and in a large pan place the shredded dough and cut either by hand or by scissors, rub well with the melted butter then place on a slow fire to let all dough turn into golden color. Use a medium oven tray to spread half of the dough in it, then by a smaller tray press firmly on the dough. Mix 3 Tsp. of the syrup with the pistachio and spread on the dough, end with the remaining dough on top of pistachio and press again in the same way, then place a heavy thing on top of the smaller tray and leave it at least 7 hours or overnight . Next day heat oven 150 F then bake the dough for 15 minutes , remove from oven, turn upside down into another tray ( similar size) and bake further 15 minutes. Pour half of the syrup on it and leave 30 minutes then turn upside down the dough and pour the rest of the syrup. Cut into squares and serve.
