1940 Cowboy Cookies Sift together and set aside 2 cups flour, 1tsp soda, 1/2 tsp salt, 1/2 tsp baking soda. Blend together 1 cup shortening, 1 cup granulated sugar, 1 cup brown sugar, firmly pack. Add 2 eggs, beat to light and fluffy. Add flour mixture, mix well. Add 2 cups rolled oats, 1 tsp vanilla, 1 pkg semi-sweet chocolate. Dough is crumbly. Drop by tsp on greased sheet. Bake 15 min at 350 degrees. About 11 doz. My mom made these every week for dads lunch...I got them hot out of the oven, later I baked them for my son...and got them hot out of the oven!
