5 gallons picked = 7 quart canned. Core your tomatoes, scald for a few minutes and put into cold water. Peel the skins, quarter and jar the tomatoes to the neck of the jars. Add 1 tsp. of salt, snug lids. Put into cooker at 5 psi. When rattler jiggles, allow to go for 10 minutes, shut down the stove and allow to depressurize before removing your jars from the cooker. Thats all there is to it!
