6th Annual Old Settlers Rib Cookoff Public · By Coleen Hodges Time to fire up the smokers!!! Lodgepole, Nebraska Hurry and get your entry forms into me so I can get the ribs ordered!! 6th Annual Rib Cook-Off Contest Contest Rules All cooking teams consist of one head cook and as many assistant cooks as the head cook requires. Each team will furnish their own cooking device, fuel source, chairs, tents and work tables. Please be curtious and clean up your area after the event. Meat will consist of 3 (three) racks of pork ribs, furnished by the rib committee. You may leave them whole or cut to baby backs. You may purchase additional racks for cooking. Three (3) racks must be used for the judging aspect of the competition. You may have more than one entry, but you must purchase another entry of three (3) full racks. Each Contestant must submit six (6) servings for judging. Each serving consists of one rib bone. Servings must be cut into individual servings. Containers for judging will be provided on check in that morning. Only containers provided by the committee will be permitted. You may garnish your entry with the following only. Chopped, sliced, shredded or whole leaves of fresh lettuce or curly leaf parsley. Use or non use of garnish will not affect the scoring of appearance. Entries are to be scored using the following criteria. APPEARANCE, TENERNESS/TEXTURE, and TASTE. The Scoring System is from 10 (best) to 1 (worst). Scoring will be based on total points earned and not on average points earned. If there is a tie the lowest score is dropped to determine a winner. Ruling by the head judge on all maters is final. No contestants are allowed in the judging area during the competition. The Judging area will be located in the gazebo. There will be an area marked off of where the cooking areas will be allowed. Electricity is available if needed. Please make sure to let the committee know so we can be prepared for you. You must bring your own extension cord. 11. “Anything Goes”: The “Anything Goes” category is defined as your choice of a favorite grilled recipe. This entry can be anything but pork ribs, as long as the main component of the dish is cooked on the premises and on the grill. You must bring the ingredients you require and prepare at least 6 servings for judging. Please prepare enough for sampling after the judging. Tentative Schedule 7:00 am - Ribs available for pick up 8:00 am - set up and cooking can commence 8:00 am-4:00 pm - Cook Time 4:00 pm - Containers will be picked up for judging. 4:30 pm-5:30pm - Judging 6:00 pm- Awards and public tasting
