A big happy birthday to my dad! I decided to cook a meal for my dad and his wife, my mother. Roasted lamb chops seasoned with lemon juice, lemon zest, olive oil and herbs and spices, a creamy avacado mashed potato mixed with herbs and spices, shallow fried eggplant with butter and seasoning and some stir fry vegetables.
