A dear friend just called a few minutes ago and asked me for a quick dessert. Keeping in mind that he dines out a lot so I wanted to make it fun and easy. After I came up with it I decided to play with the idea and see what I can create. (I will do that later tonight) Below is my email to him and the dessert if anyone wants to try it. Please post if you do give it a shot. Ok Anthony, this is simple, send me a picture when your done. Enjoy!!! Cook 2 cans of peaches with syrup in a sauce pan. Add a dish or two of vanilla, cinnamon and a tiny bit of nutmeg. To bring out the flavor even more add a pinch of lemon zest. Cook down until the syrup is a bit thicker. If need be add a lil cornstarch but just a tiny bit to thicken it up. Once tick remove from the fire and add brandy to taste. The brandy will thin out your syrup that is why it is important to have it at a nice thick consistency. Place on the side to cool. To make your crumble mix together with a fork oats, butter(it can be unsalted) cinnamon flour brown sugar (make sure you add the same amount of sugar and flour) For a small batch I would use 1/2 cup. You can add nuts or cranberries to add texture and tartness. To serve place peaches in a bowl. Use a spoon that will strain off most of the liquid. Top the peaches with the crumble and drizzle the peach syrup on top. Garnish with a dash of cinnamon and nuts and berries (optional)
