An open letter to my friend Moishe Hahn Schuman Dear Moishe, Last week you told me you were moving on and becoming chef at a new restaurant. While Im sad to see you go, Im very happy for your new found position and what will clearly be your new found success. Bittersweet is possibly the most apropos metaphor I could use in describing my feelings on this subject. While you only worked one evening a week, my week began after your shift ended. They say you never want to follow a great comedian on stage and in many ways this is analogous, for your Wednesday stints were so overwhelming successful it occasionally made me want to take Thursdays off. Id look at your menu postings on Facebook and say, Damn, why didnt I think of that? Moishe, If I was Salieri, then you were most certainly my Mozart.Id also like to say that I think this is a wonderful opportunity for you--becoming chef at Shed--the Liptons are generous, food savvy, forward thinking people and having the opportunity to reunite with Mike Hale (possibly the best front-of-the-house guy in the business),makes for a wonderful situation for you and for them. In closinglet me say that if for whatever reason it doesnt work out, I can most assuredly say that you would be welcomed back with open armsby every patron at The Casino Bar and Grill.
