Applecchini breakfast cakes (Zucchini apple) pancakes 1.5 cups coconut flour 2 tbsp baking powder 1 tsp cane juice 1/2 tsp ground nutmeg 1/2tsp ground cinnamon 1/8 tsp Himalayan salt 1 egg (2 if they are pastured. D free range--they tend to be smaller!) 1 tsp coconut oil 1 heaping cup of zucchini 1 heaping cup of your favorite apple Mix all wet ingredients, drop in zucchini and apple and enjoy! We liked a harder pancake and found that if you cooked each about 4 minutes per side, they turned out perfect. Double tap if you are gonna try this!
