Baked Pineapple Casserole 1 large can chunk or tidbits pineapple (do not drain) (I do drain though) 2 eggs 2 tsp flour 2 slices bread 1 stick butter ½ cup sugar Grease casserole dish, set aside. Break eggs and mix. Mix with sugar and flour. Add pineapple and mix together. Pour into casserole dish. Break bread and cover the top of the mixture. Slice butter over the bread. Bake @ 400º 1 hour, covering with foil the first half hour and uncover the second half hour to brown. So, so good, I usually have to make a double batch. I like the non-deep casserole dishes so you have more of the bread covering. Great as leftovers, too!
