Baking/cooking tip #1: When making a cheesecake use steam to prevent cracking & keep it moist. If using a spring form pan wrap the bottom in tin foil & set in a shallow pan or baking sheet, then when in the oven pour water into the pan (tin foil keeps it from soaking into crust through spring form) and make sure to keep adding water throughout the cooking. When cheesecake is firm on the edges & close to done 5-10 min before end of cooking time) turn off the oven & leave cheesecake in until the oven is cool. ~Christina~
