Bread of the day: Country Sourdough. Greetings friends. I have been extremely busy with the details of my move, however, making bread brings me so much joy and happiness as well as a much needed break from the mundane. Todays bread, Country Sourdough is based on a recipe from Tartine in San Francisco. Its a wonderful bread; incorporating a sourdough starter and a mixture of wheat (10%) and bread (90%) flour. The dough goes through a lengthy bulk fermentation period; 5-6 hours and then is refrigerated overnight to enhance its taste. I then bake the bread in a Dutch oven for 20 minutes before removing the cover and baking it an additonal 20 minutes. This is one of my favorite breads when it turns out right. I enjoyed two small pieces and then shared the rest of the loaf with my friend Mark Gies. How would you enjoy this bread? Once again, thank you for all your support and feedback.
