Breakfast Enchiladas 1 lb Sausage 2 cups shredded cheddar cheese 8 (8 in) Tortillas 6 eggs 1 Tbs all purpose flour 2 cups half & half (I used fat free) 3 oz real bacon bits (I bought the package) Cook sausage, then stir in 1 cup cheddar & half the bacon bits. Place 1/8 mix in each tortilla & roll, then place seam down in greased bake dish. Mix eggs & flour, add half & half and pour over enchiladas. Can refrigerate overnight or cook immediately. Sprinkle remaining cheese & bacon bits, cover with foil and bake at 350 degrees for 35 minutes. Then uncover & bake additional 10 minutes.
