Busy day! Completed a project for Craftseller magazine, then did our weekly shop then prepped all our lunches and dinners for the week. Chana masala; orange and lemon cous cous with caramelised fennel, olives and chickpeas; chicken broth with 5 spice and mushrooms; chorizo, chickpea and roast veg stew are all waiting for us in the fridge, plus theres chicken marinating for a korma tomorrow. Ive also cut up treat-size boxes of pineapple, kiwi and orange for Willow for when she needs a snack. Ive found that making our meals on a Sunday and trying to eat as much vegetarian food as possible is making us healthier and happier!
