CHICKEN IN OYSTER SAUCE WITH WATER CHESTNUTS & SPRING ONIONS Chatting with a food group friend gave me the inspiration to use the sauces lying in the house to prepare this. 6 Chicken drumsticks 8-10 fresh water chestnuts chopped 1/2 cup chopped spring onions 4-5 stalks of lemon grass 2-3 green chillies chopped 1 tsp coriander chopped 2 tsp soya sauce 2 tsp green chilli sauce 1 tsp golden syrup 1/2 cup oyster sauce 2 tsp chilli flakes 1 tsp black pepper powder 1 tbsp oil Score the chicken pieces and marinate in soya, chilli sauces and pepper for 3-4 hours. Heat oil. Add the green chillies. Stir and put the chicken pieces. Cook at low heat. After 10 minutes add lemon grass. Once the chicken is cooked well add the oyster sauce. Cook for 1-2 minutes. Add 2-3 tbsp water if required. Add the golden syrup, chilli flakes, water chestnuts and spring onions reserving some for garnish. Mix well and sauté for a minute. Serve garnished with spring onions and coriander.
