Cajun Grits 2 tbsp bacon grease 2 tbsp plain flour ½ cup onion chopped 1 green bell pepper chopped ½ cup celery chopped 1 cup instant grits 1 cup fresh peeled and chopped tomatoes 1 cup bulk sausage fried and crumbled 1 cup crumbled fried bacon Using a heavy skillet, heat bacon grease, add flour, stir constantly to make a roux… Cook until light brown… Add onion, bell pepper, and celery, cook for 5minutes… Cook grits according to instructions on package… Then add to roux… Add sausage and tomatoes, then stir well… The cover with bacon… Serve right then…
