Friendship Breads By Request Starter: 1 (.25 ounce) package active dry yeast 1/4 cup warm water (110 degrees F/45 degrees C) 3 cups all-purpose flour, divided 3 cups white sugar, divided 3 cups milk In a small bowl, dissolve yeast in water. Let stand 10 minutes. In a 2 quart container glass, plastic or ceramic container, combine 1 cup flour and 1 cup sugar. Mix thoroughly or flour will lump when milk is added. Slowly stir in 1 cup milk and dissolved yeast mixture. Cover loosely and let stand until bubbly. Consider this day 1 of the 10 day cycle. Leave loosely covered at room temperature. On days 2 through 4; stir starter with a spoon. Day 5; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Days 6 through 9; stir only. Day 10; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Remove 1 cup to make your first bread, give 2 cups to friends along with this recipe, and your favorite Bread recipe. Store the remaining 1 cup starter in a container in the refrigerator, or begin the 10 day process over again (beginning with step 2). Cinnamon Friendship Bread~ At any time during this do not use metal spoons or bowls when mixing. Do not refrigerate. If air gets in the bag, burp the bag and let it out. It’s normal for mix to create air while it rises, bubbles and ferments. Day 1: Do nothing. This is the day after separating the batches Days 2-5: Mush the bag Day 6: Add 1 cup flour, 1 cup sugar and 1 cup milk to the bag and mush the bag Day 7-9: Mush the bag Day 10: Make the bread with the instructions below: Pour the entire bag into a non metal bowl Add 1 ½ cups each of flour, sugar and milk. Mix until well combined Measure out four separate batters of one cup each into four 1-gallon zipper bags. Keep a starter for yourself and give three to friends, along with a copy of these instructions (be sure to pass along which day of fermentation – from above – written on the bag when you give it away. Preheat oven to 325 degrees and grease two large loaf pans. To the remaining batter in the bowl add: 3 eggs ½ cup milk 1 cup oil (or ½ cup oil and ½ cup applesauce) 1 cup sugar 2 tsp cinnamon ½ tsp vanilla 1 ½ tsp baking soda ½ tsp salt 2 cups flour 2 small boxes instant vanilla pudding Stirring by hand, mix all ingredients thoroughly. Mix additional ¼ cup sugar and 1 ½ tsp cinnamon. Split the sugar mixture in half and one half to evenly dust both greased loaf pans. Pour the batter evenly into the two loaf pans and sprinkly the second half of the sugar mixture over the tops of both. Bake for one hour, remove from oven and cool on a wire rack until the bread loosens from pan evenly; turn the bread out and enjoy. Can be served warm or cold. Lemon Friendship Bread ~ Omit the Vanilla extract and cinnamon; add 1 tsp lemon extract and replace the vanilla pudding with instant lemon pudding mix. And use plain sugar for dusting the pans. Optional: add poppyseeds for flavor Banana Friendship Bread Omit the cinnamon and vanilla pudding and replace with 2 mashed bananas. Chocolate Friendship Bread - Omit the cinnamon and vanilla pudding and add 1 large box of instant chocolate pudding, and ¾ cup chocolate chips. Bake for 1 ½ to 1 ¾ hours. Apple Cinnamon Bread ~ Add 1cup of raisins and one small diced apple to the basic recipe Butterscotch Friendship Bread ~ Omit the vanilla pudding and add 2 small boxes of Butterscotch instant pudding and 1 cup of butterscotch chips. Zucchini Friendship Bread Add 1 cup of grated zucchini, making sure to squeeze the extra liquid out of the zucchini first. Bake for 75 minutes, but start checking for doneness after 50 minutes.
