Concept I want to try after Thanksgiving but before Christmas: Rarebit mac n cheese with gouda and bacon, paired with an apple-pecan charoset-style chutney using mead in place of the traditional red wine. Friends, who would be down for this experiment? Rarebit is a kind of Welsh cheese sauce that contains beer. It is rich and not-sweet and dark and it contains approximately eleventy billion calories. Leave it to the Welsh to come up with this madness.
