Cook Casual Position Definition of Work This is skilled general duty cooking and baking work performed in an institution/hospital kitchen or restaurant, as well as supervisory work in directing the serving of meals, supervising cafeteria operations, cleaning cooking areas, and washing and cleaning cooking utensils. Examples of Work Supervises, prepares and cooks various foods, meals, and special diets as required. Supervises and assists in the serving of meals, operation of steam tables, tea and coffee dispensing equipment, preparation of the dining area for the serving of meals, meal ticket and cash transactions, and preparing and catering to special luncheons and dinners. Prepares food orders each morning or evening as required. Checks equipment, kitchen and related areas for cleanliness, ensures that garbage is taken away, and that containers are clean. Performs other related duties as required. Knowledge, Abilities and Skills Must have knowledge of: - serving duties and food service. - materials and methods used in preparing food on a quantity basis, and the use and care of utensils and equipment. - some knowledge of food values and dietetics. - some knowledge of health hazards in food preparation and service, and of effective precautionary measures. Must have the ability to: - establish and maintain effective working relationships with other employees and clients. - train new employees in the techniques of food handling and serving of meals. - effectively supervise subordinates engaged in cleaning kitchen equipment and premises. - supervise and handle routine cash transactions, and maintenance of prescribed records. - cook and bake pastries and desserts on a fairly large scale. - work while standing, and under conditions of high temperature. - work from written menus and recipes. - prepare staple food stuffs and baked goods. Experience and Training Graduation from high school preferably supplemented by completion of a course in food service and preparation, or any equivalent combination of experience and training. Experience as a head waitress or food service worker in a large restaurant/institutional dining room is desired, but not essential. Must be able to provide a “Certificate of Conduct” from the RCMP.
