Cooking french onion soup is laborious but ultimately rewarding. White onions are preferred and are sauteed over a low heat until soft and lightly browned (takes abt 45 min). Wine is added over high heat and cooked till almost full evaporation. Stock is added ( I find a good chicken stock better than the more aggressive beef ) n simmered for an hour. When ready for serving, a slice of baguette is toasted first on both sides with olive oil n then grated Gruyere sprinkled on top to be melted. Voila!
