DETOX day 3 tomorrow prep and instructions! vesnabliss BREAKFAST: warm lemon water, wheatgrass and Wild Rose kit. EGGS in BELL PEPPER: 1 or 2 red, green or orange bell peppers (your choice), Whole eggs, Salt and freshly ground pepper to taste. Cut the bell peppers into ½ inch/10mm rings on the cutting board. Use a sharp knife to make clean cuts (to better hold the egg in place). Cut away the white inner flesh and seeds. Crack one egg into each bowl. By cracking the egg into the bowl first, you can remove any shells or avoid having a bad egg drop into the pepper rings. Place the pepper rings in the middle of the pan. Allow the rings to cook and brown lightly before adding the egg. If possible, you may want to turn the rings over a few times so both sides cook evenly. Add one egg to the middle of each bell pepper ring. Gently allow the egg to slide from the bowl into the ring middle.Continue cooking over low heat until yolks firm and egg whites harden (and are no long translucent). serve with avocado, tomato and cucumber if you wish. Mid morning snack: apple and almond butter Noon: FRESH JUICE: lemon, ginger, spinach, grapefruit, beets, celery and kale. Lunch: Steamed veggies of choice with quinoa and smoked tofu (you can also add salmon or chicken breast) INGREDIENTS: 2 cups water, 3/4 teaspoon salt , divided, 1 cup quinoa, rinsed well (see Tip), 1/4 cup lemon juice, 3 tablespoons extra-virgin olive oil, 2 small cloves garlic, minced, 1/4 teaspoon freshly ground pepper, 1 6- or 8-ounce package baked smoked tofu, (see Tip), diced, 1 small yellow bell pepper, diced, 1 cup grape tomatoes, halved, 1 cup diced cucumber, 1/2 cup chopped fresh parsley, 1/2 cup chopped fresh mint. DIRECTIONS 1. Bring water and 1/2 teaspoon salt to a boil in a medium saucepan. Add quinoa and return to a boil. Reduce to a simmer, cover and cook until the water has been absorbed, 15 to 20 minutes. Spread the quinoa on a baking sheet to cool for 10 minutes. 2. Meanwhile, whisk lemon juice, oil, garlic, the remaining 1/4 teaspoon salt and pepper in a large bowl. Add the cooled quinoa, tofu, bell pepper, tomatoes, cucumber, parsley and mint; toss well to combine. Tips: Tip: Quinoa is a delicately flavored, protein-rich grain. Rinsing removes any residue of saponin, quinoas natural, bitter protective covering. Find it in natural-foods stores and the natural-foods sections of many supermarkets. Precooked baked tofu is firmer than water-packed tofu and comes in a wide variety of flavors. You might also like flavored baked tofu on a sandwich or in a stir-fry. MAKE AHEAD TIP: Store in an airtight container in the refrigerator for up to 1 day. Whisk dairy free yogurt, vegan mayonnaise, lemon juice, mint, garlic, honey and salt in a small bowl until creamy. 2. Toss zucchini, bell pepper, radishes and chickpeas in a large bowl. Pour the dressing over the vegetables; toss gently. To serve, spoon into lettuce leaves, using them as cups. Tip: MAKE AHEAD TIP: Store the chopped salad and dressing separately, tightly covered, in the refrigerator for up to 1 day.
