Date night recipe. Todays recipe is, Rice and peas/beans with sautéed salmond, with salad on the side. Ingredients · Long grain brown rice, 1 cup 240ml. · Kidney beans, 1/2 cup, 120ml. · Green onions, 2 finely chopped. · Regular onion,1 roughly chopped. · Coconut milk,a process can or a whole one grated, 1cup 240ml. · I scotch bonnet pepper or 1tsp black pepper 5ml.preference · All purpose seasonning 1tbsp 15ml 3tsp. · Filet atlantic salmond or 2 sliced. · Lemon, 1. · Salt.* · Ice burg lettuce. · Garlic 2 cloves. · Thyme · Tomatos · Pine nuts · Those garlice bread cubes for the salad, i forgot what the are called. · Strawberry · Baby oranges · Rasins · Cream garlic salad dressing. · Peaches. Preparation for the rice and beans. 1. In a medium pot, place the pot on a burner and set the dial on medium heat add 3 cups of water and let it rise to boil 100 deg Celsius. 1. Add the beans let them cook for approximately 30mins, 1/2 hour, 1.5hr or until partially malleable. 2. Add the chopped regular onion and combine it. 3. Add the coconut milk, and 2tsp, 10ml of the pepper. 4. Add the rice and reduce the heat to the setting medium low, counter clockwise if its analog 1/4 turn and let it cook for another 30mins/ 1/2 hour, 1.5hr until the liquid is evapourated. 5. Do a taste check, with a spoon remove a small portion of the rice an check the texture to see if it is to your liking, if its not thoroughly cooked add a 1/2 cup more water until it is completely cooked. Preparation for the fish. 1. Large empty bowl, 2. Plate with cornmeal, 3. Plate with flour, 4. A bowl with two crack eggs, 5. 15ml 1tbsp 3tsp of all purpose seasonning, 6. One lemon, 7. two green onions, 8. Filet or 2slices of fresh atlantic or any other salmond that is readily available. This may be prepared prior a day or a few hours before cooking to aquire a more favorable taste that please ones palette. · In the empty bowl place the fish and combine the 15ml 1tbsp of all purpose seasonning smearing both sides or filet one slice at time. · Remove the fish and place it in the egg coating both sides. · Remove the fish and place it in the flour coating both sides. · Remove the fish and place it in the corn meal always shaking of any excess. 1. In a medium frying pan heated on medium heat. 2. Add a 2 tbsp, 30ml of cooking oil of your choice. 3. Add the fish one slice or filet at a time. 4. Let it fry for 6mins on both sides 5. Remove the fish from the frying pan and place it in a heated oven on a draning rack if availabe or foil or any glass or metal cookware that is rated for oven use. 6. Let it cook for another 3-4 mins then remove. 7. In the same frying pan without washing deglaze over medium heat by adding 2tbsp 30ml of vinegar and 10ml of butter 2tsp. 8. Add the chopped green onions 9. Add garlic 10. Let them fry until caramelize, add 1/4 cup of water and let it reduce add salt if need to suit your taste. Serving. · On a medium plate , with the cooking spoon, place two spoon full servings of the rice and beans to one side. · Place a slice of the fish opposite from the rice. · Place the chopped lettuce along with the slice tomatos and garnished with pine nuts, rasins, strawberry, baby oranges and slice peaches. · And the garlic bread things toasted in the oven for 2 mins. · With the sauce that was reduce in the frying pan drizzle overtop the fish and also the rice. · Add creamy garlic salad dressing on the lettuce. Beverage. · Carrot juice. Ingredient. · 2 large carrots. · 1 Guinness. · 1 condense milk. · Zest of a lime or orange · 2 eggs. · 1/2tsp 2.5, nutmeg · 1 nutriment · Rum 30ml · 1/2 cups of sugar. · 1/2 water. 1. In a blender grate the two carrots or use a juicer as a subtistute if availabe. 2. With the extracted juice in the blender. 3. Turn the blender on medium low to medium speed. 4. Add eggs. 5. Nutmeg 6. Condense milk 7. Nutriment. 8. Sugar. 9. Guinness. 10. Rum. 11. Blend until the ingredients is thorougly incorporated. 12. Check the viscosity and make adjustments if need. 13. Pour into a glass with crush ice and add the zest over top. · On a table place the plate with the food on a serving mat along with the freshly made beverage. · Light candles. · Turn on the stereo setting the mood for the occasion. · Diggin and enjoys.
