Dinner tonight and my meals for the next couple days! I used to make a couple different options for meal preps, but it took longer, so now I just make one BOMB meal that I look forward to even on the 5th or 6th meal! Naked Chicken Fajitas -5 chicken breasts, fat trimmed -2 bell peppers -half red onion -whole bundle of asparagus -7tbsp lime juice -2tbsp chili powder -2tsp ground cumin -2tsp onion powder -olive oil 1. Heat oven to 350 degrees. 2. Mix together lime juice, chili powder, ground cumin and onion powder and pour over chicken to coat. Put in oven for 30 minutes. 3. Slice onion, bell pepper, and cut asparagus stalks in thirds. Place in skillet with olive oil and pepper. Cook until veggies are tender. 4. Once chicken is done take out of oven and cut into small cubes and let sit in juice. 5. Distribute chicken and veggies into 6 containers and pour leftover juice on chicken. Voila! A delicious and HEALTHY meal to enjoy :)
