Do I have a treat for yall!!! Being from Texas... You must all know that I am obsessed with Mexican food. All. Of. It. Chips...salsa...enchiladas...queso... Ok, so maybe I mean the Tex-Mex version of Mexican food ;p Nevertheless...Ive been craving some of the good stuff. Heres my little creation! It makes a HEAPING pot of soup, and heres the beautiful part, its only 165 calories a serving!!!! Now, I plugged all of the ingredients into MyFitnessPal saying that there are 8 servings in this huge concoction. Winning. Its at least 1 1/2c of soup. But with calories this low...feel free to have an extra serving...add in cheese or avocado...or make your own chips.... Like I just did :) {{{ Extra Lean Turkey Taco Soup }}} 1 package of Jennie-O extra lean ground turkey 1 packet of Mrs. Dash salt free taco seasoning 1 cup of fat free chicken broth 1 cup chopped onion 1 cup chopped cilantro 1 cup pico of your choice 1 cup chopped bell pepper 1 can of black beans - drained 1 massive can of organic fire roasted diced tomatoes [confession: Im ridiculously lazy and my grocery store had all of the items pre-chopped] Directions 1. Brown turkey meat (I used coconut oil spray on pan first) 2. Dump everything else in a soup pot 3. Bring to boil 4. Add in turkey meat to pot 5. Let simmer Boom. Dinner. {{{ridiculously easy and tasty and healthy tortilla chips}}} 1. Spray pan with coconut oil 2. Slice up corn tortillas (2/person = serving) to favorable size 3. Place corn tortilla slices on pan...dont overlap! 4. Flip when hard/gets a darker color Let these suckers cool off first to make sure theyre crispy!!! Enjoy friends!!!
