EASIEST-PEASIEST CHRISTMAS CAKE...3 ingredients! Thought some busy Mums may like to try this recipe. Consider it a Chrissy present :) Preferably soak overnight: 1 kg mixed fruit in 600 ml chocolate milk (I make the milk up with choc ice cream topping) Add 2 cups sifted self-raising flour. Combine. Bake at 160 (fan forced) for 1hr and 15 minutes. DONE! This is a delicious Chrissy cake and is lovely and moist. [Aldi were selling a ready-to-roll almond icing a few weeks ago, which Im trying this year. Dont know if they still have it. Also saw a ready-made iced cake there, with a star cutter used over the icing as a pattern. Going to try that too!]
