EASY CHEESY HASHBROWNS from scratch. What you need- one lb of hamburger or choice of meat. One medium onion, five to seven small potatoes (note this is a great use for the tiny taters in a bag) bag of shredded cheese(1lb). Brown hamburger with diced onion. Wash taters by hand and using a CHEESE GRATER grate all the potatoes, i do it with peel on for the extra nutrients the skin provides. Once hamburger is cooked drain and put back in skillet. Add taters and stir to thoroughly mix in the meat and onions. Cook appx 15 mins or until taters r done (200-250degrees). Reduce to simmer and by hand sprinkle handfuls of shredded cheese until evenly covered (i use the mexican or fiesta blend) replace lid and allow to set five minutes or until cheese is melted. Serve hot. This will make enough for two people for two meals plus having extras to go with breakfast. You can add a few shakes of garlic salt to taste as i do. Crushed red peppers will add a little kick/heat. Enjoy.
