Feast like a hungry #leprechaun. Corned Beef Hash Ingredients 1 1/4 pounds (568 g) small red potatoes, halved 1/2 small onion, halved, about 1/4 cup (45 g) 1 small green bell pepper, seeded, cut in eighths, about 1 cup (145 g) 1/2 pound (227 g) deli corned beef (cut 1/2 – inch (1.3 cm) thick), cut in 1 1/2 – inch (4 cm) chunks 2 Tablespoons (30 ml) vegetable oil 1/4 teaspoon black pepper 1/4 cup (60 ml) water 5 large eggs, if desired Directions 1. Place potatoes, onion and bell pepper into the Vitamix container. Add water to just cover vegetables and secure lid. 2. Select Variable 3. 3. Pulse 6 times. Pour into colander; drain well. 4. Add corned beef to the Vitamix container and secure lid. 5. Select Variable 5. Pulse 2 times. 6. Heat oil in 12 – inch (30 cm) heavy nonstick skillet over medium heat. Add potato mixture and corned beef. Stir in black pepper. 7. Cook 8 to 10 minutes, turning mixture over 2 or 3 times, until brown and crisp. Add 1/4 cup (60 ml) water. If desired, make 5 depressions in surface of hash. Drop an egg into each depression. Cover; turn heat to Low. Cook 8 to 10 minutes or until potatoes are tender and eggs are cooked to desired doneness.
