Festive recipe!! Healthy Caramelised Nuts Ingredients: 50g walnuts 50g Almonds 50g brazil nuts 50g hazel nuts 50g Macadamia nuts 2 teaspoons macadamia oil 2 teaspoons of dried fruit 2 tablespoons stevia 200ml water 1 sprig of fresh rosemary (or dried rosemary if unavailble) rock salt to season Aluminium baking foil Flat baking tray To prepare: a) Pre-heat the oven to 180 degrees centigrade (approx gas mark 5) b) Cover your baking tray with a sheet of aluminium foil and brush with the macademia oil to prevent your nuts from sticking. c) Place your nuts into a large mixing bowl and add the powdered ginger. d) Add your water and stevia and remaining macadamia oil to a small bowl and heat through mixing gently until fully liquid. Slowly pour the liquid mixture over the nuts stirring all the time to lightly coat all the nuts. Add your rosemary now as well and mix in firmly ensuring a certain amount of crushing to the leaves to release the flavour. e) Spoon your nuts onto the baking tray and place into the oven for approximately 15 - 20 minutes or until golden brown – the honey will darken slightly during the roasting but should not blacken. f) Sprinkle on the rock salt at this point and then allow the nuts to cool on the tray before transferring them to a bowl to serve – the nuts need to cool or the nuts will all clump
