Fish Recipes BREADFRUIT COU-COU WITH STEAMED FLYING FISH For the Cou-cou ~ INGREDIENTS: 1 breadfruit 1 tsp. of reduced sodium salt 1 bunch herbs 1 pint stock 2 tbsp. butter 1 chopped onion METHOD: Cut breadfruit in slices and boil with herbs and onion, in water just covering the fruit. When soft, take from heat and crush with a potato masher, then with a heavy wooden spatula to make smooth adding stock as necessary. Stir in some of the butter and when smooth place in dish and spread with remainder of the butter. For the Steamed Flying Fish ~ INGREDIENTS 6 boned flying fish (or any filleted white fish) Juice of one lime 1 onion, chopped 3 green onions, chopped 2 cloves garlic, minced 1/2 hot pepper, chopped 1/2 tsp. ground thyme 1/2 tsp. ground cloves 1/2 tsp. salt 1/2 tsp. black pepper 1tsp Olive oil ½ can Tinned diced tomatoes METHOD: Wash fish and place in bowl. Combine lime juice, onion, green onions, garlic, hot pepper, thyme, cloves, salt and black pepper. Marinate fish in this mixture. Remove fish from mixture and place to the side. Heat the oil in a pan and place all other ingredients in the pan and cook on a medium heat for 10 minutes until the onion is soft, stirring when necessary. Add the fish on top of the sauce and cover to steam, leave for 5-10 minutes, stirring the sauce if necessary. Serve on a bed of cou-cou. Recipe taken from multiple sources. Healthy Fish Recipes
