For some reason, this has been on my mind for several days: when Sidney was at her school here, they wanted to make the lunches healthier, on a budget. I wont go all into what their idea of this was, but it showed up as whole wheat pasta with no dressing/sauce and lettuce with no dressing, either. Students were understandably totally turned-off. Whoever had been in charge of the healthy meal-plan had apparently never been poor and cooked at home. When I was in elementary school and our family budget was rather tight, this is a selection of what I- delightfully- ate on a daily/weekly basis: beans(a variety, usually small red or kidney), cole slaw, pineapple ring w/ mayo dashed with paprika(this was a treat, seriously), cabbage cooked with ground beef, pork chop in onions, carrot salad, rice, cornbread, boiled/steamed green beans(they were not over-cooked), summer squash, and mashed or baked potato with butter/chives(REAL chives, from garden)/steak sauce(that was thing for potatoes in our house)and/or scallions. This was just a frequent selection, with cooks-choice variations. It was heavenly- and delicious, nourishing, frugal. If you are a cook, even on a budget, you can make quite a spread. Now- finicky eaters may and can make a fuss and extra expense and effort(really, I know, others More than me), but youre talking about basic school lunches, people. What of what I grew up with- variations included- is not feasible??
