For those of us who love avocados, there is great news! A study recently published in the Journal of the American Heart Association found that eating one avocado a day for just five weeks lowered LDL (the bad) cholesterol and improved heart health. The current consensus is that our fear of saturated fat has come at the price of cutting all of our fats, including the healthy monounsaturated fat, out of our diet. The fact is, we need a moderate-fat diet for overall health. There are so many ways to enjoy avocados. Here in the Southwest they are commonly served as guacamole, but be careful with what youre dipping in the guac! Cut up some organic bell peppers to dip in the guacamole as a substitute for tortilla chips. I also love to eat avocados all by themselves, sometimes with salt sprinkled on top, or mixed in a salad with feta cheese, or on top of chicken.
