For those of you that do not have time each day to cook healthy meals, this is what I do. Each Sunday I prep and cook meals for the week. This week I sautéed zucchini from our garden with onions, roasted butternut squash in the oven, cooked 6 lbs of chicken breast, and cooked about 10 cups of rice. These are the foods the take the most time to cook, so I cook them ahead of time and divide them in to Pyrex conrainers. Hope this helps. Next week Stephanie and I will post a video with some of the prep. From start to finish and cleaning takes me about two hours, but I have been doing this for 5 years, so I am pretty fast.
