Fresh Peach Scones Ingredients 2 cups all purpose flour (I sub in 1/2 cup oat flour) 1 T baking powder 1/2 tsp salt 1 tsp nutmeg 1/4 cup sugar 5 T cold unsalted butter 1 cup heavy cream 1/2 tsp brandy or almond extract 1 cup fresh or canned peaches, diced 1. Chop the butter into small pieces and place in freezer for about 20 minutes. 2. Preheat oven to 425F and line a baking sheet with parchment paper. 3. Stir together flour, baking powder, salt, nutmeg, and sugar. 4. Cut in butter with a pastry cutter or knife; do not overwork. (There should still be small, up to pea size, pieces of butter.) 5. Gently fold in peaches. 6. Add cream and brandy extract, stir gently to combine. Dough will be wet and sticky. 7. Flour a cutting board or other surface, and turn dough onto board. Gather dough into a shaggy ball and press flat until it is about 1/2 inch thick. (You can dust the top with flour if necessary.) Cut scones with a 3" round cutter or cut into wedges and transfer to baking sheet. 8. Bake 10 minutes or until golden brown. Let cool before serving. Makes about 10 scones
