Fried rice I must explain we grow celery and use it when it gets about as thick as a pencil boil up 1 1/2 cups of fried rice until soft. drain and wash in cold water frying bit of the recipe - 3 stalks of celery pencil thick -chopped finely 3 spring onions chopped finely 3 cloeves of garlic sliced finely 2 rashers of bacon sliced thinly 1 teaspoon of crushed garlic 1 1/2 teaspoons of sweet cajum spice mix - its a mixture we get from our greengrocer - its made in Toowoomba. whatever turns you on for spicey spices will do 1 teaspoon of crushed black pepper big dollop of butter fry all of this until you think the bacon is cooked - doesnt need to be crispy, just cooked properly then crack in two eggs and stir until the eggs are cooked. Add the rice and stir some more until well mixed. Add a good galloop of worcester sauce and soy sauce, stir some more until all of hte rice is whatever colour it turns. Sometimes orange, sometimes brown, but it shouldnt be white. serves 4 or 5 people
