Funny how things work out, as I am finishing up the editing of this new “Faith Walk” story on Duck Fat, Jeff put one of the ducks that he got butchered into the slow cooker, to be ready for today’s lunch. It cooked through the night, so the whole house smells good. I am reading this story to each of kids as they get up, and then they are all looking at this little duck in this slow cooker because it smells so good. That duck use to be alive and waddle around our home…it’s just not the same as the meat you buy from the store ;(. Now we know how they get the duck fat from the duck…Enjoy the story!!! “Yes, Yes, I Need That Duck Fat…!” For quite a while, I had wanted to make a bean recipe that my friend had made and shared with me. When I tasted it I couldn’t believe how good it was. From that very moment, it became my absolute favorite bean dish. The best I ever had! It’s a French casserole with four different meats, beans, vegetables and spices. I love to cook and this was not going to be an easy dish to shop for, especially at a food pantries. I am a single mom with two special needs children, so my food shopping takes place at local food pantries, unless I can find a super deal at a grocery store where I can use the little I get on my Link Card. I couldn’t find all the ingredients, or like the lamb, it was just too expensive. I had to pass on purchasing some items. I went to Faith Acres and found lamb in their freezer, I was excited! After I found the lamb, all I needed was duck fat. Yes, I know, duck fat. I went to a few places—Jewel, Whole Foods, Fresh Market, Joe Caputo’s—and could not find it, maybe they where just out on the days I was there. I did find some whole frozen ducks, but not the duck fat. Unfortunately, the whole duck was just too expensive and something I could not afford. It was a typical Thursday and I was back at Faith Acres volunteering. I was helping sort through the deliveries that had just been dropped off, still hoping for my duck fat, but I did not see any. I went the next day and another delivery had just arrived. Someone asked, “Does anybody need duck fat?” I yelled, “Yes, yes, I need that duck fat for a recipe I want to make!” I could not believe that Faith Acres got duck fat in. It was such an odd thing for them to get. I was so happy that they did get it, now that I have the duck fat, it won’t be long before I make the best bean dish ever! O taste and see that the LORD is good: blessed is the man that trusts in Him. Ps. 34:8 We here at Faith Acres are always excited when that perfect gift comes in for an individual, even duck fat! The joke to all that guests and volunteers on that Friday was, “Duck Fat, get your Duck Fat…Who needs Duck Fat?” The responses we got where hilarious! “What is Duck Fat? Didn’t know you could get duck fat... How did they get the fat from the Duck? WHAT IN THE WORLD DO YOU DO WITH DUCK FAT?” What a day of laughter over what to do with duck fat, but then the questions was asked one more time when we were closing down for the day “Does anybody, ANYONE, ANYONE need duck fat?” You would have thought this woman won a million dollar. With great excitement and raising her hands, jumping up and down, it was as if she had just won a marathon race. We all stopped and looked at her, “It’s for you, we should have known (God brings this cook some of the craziest foods), WHAT DO YOU DO WITH DUCK FAT?” We all just giggled at the faithfulness of God to bring in something as unique as "DUCK FAT” Enough for other families, and for this mother that works so hard to gather weekly groceries for her children. Not only does she cook for herself, but she is always taking food boxes to other families who are facing hard times and takes the time to cook for others. Thank you LORD for being such a personal and loving God who cares about the smallest details in our lives, even down to providing DUCK FAT for a special recipe, for this beautiful family!
