Gingerbread-Spiced Cacao Truffles Yields 8-10 Ingredients 3 large dates, pitted 3 Tbsp cacao powder 1 tsp ground ginger 1/4 tsp ground clove 1/8 tsp ground nutmeg 1 Tbsp palm sugar & more for dusting 2 Tbsp coconut oil, melted and cooled to room temperature 1/2 tsp vanilla extract 1 Tbsp nut butter (cashew works well) 1 tsp Celtic sea salt Place all ingredients in a food processor and blend until well combined and a dough-like texture has formed. Scoop small teaspoons into your hands and roll into individual balls. Place onto a baking sheet lined with parchment paper and set in the refrigerator. Allow to soften to room temperature before serving. Roll finished truffles into palm with ground ginger or cacao. *Can be made up to a week in advance and stored in an airtight container in the refrigerator.
