HOW NUTRITIONAL VALUE OF FOOD CAN BE RETAINED ..? Most of the recommended storage times for foods are based either on food safety issues or quality in terms of taste and appearance and no guarantee of nutritional content. Despite the damage done to nutrients by heat processing, things can be kept in the refrigerator for a few days. Nutrient retain capacity is different for different items. For example: protein, carbohydrate, energy, and minerals are little affected by storage. Spinach, lettuce etc retain their nutrients best in high humidity. Carrots, sweet potatoes etc retain their nutrient when kept cool and moist. Ripen fruits retain their nutrients at room temperature. It is better to use vegetables and fruits fresh and raw to grab all its nutrients. Boiling in low flame and less time also can retain the nutrient value of cooked food. Storing vegetables and fruits for long time slowly reduces its nutrient value.
