Had so much fun canning with my mother in law, but glad to be home! Still have one box of pears that I have to can as they were not quite ready, but we did soooo much stuff! Including the peaches I did a couple weeks ago now and what maxine did with Marsha and me, the three of us canned over 600 pounds of produce and thats not including all the extra veggies like all the carrots, celery, onions, peppers and other veggies that went into all our tomato sauce and pizza sauce. Plus we bagged about 50 pounds of hamburger and maxine helped me make and freeze 10 extra large stuffed peppers to try, I diced and froze about 6 pounds of rhubarb so far and have about another 8 pounds to dice and freeze. I also have 16 large ears of corn on the cob I a going to peel clean, cut into chunks and freeze. When I am done with that I will have about 48 chunks of corn on the cob for future meals to put in my freezers. Now I just have to get a bunch of zucchini to shred and freeze for yummy bread before its gone and I am set for the I still have enough pumpkin from last year I dont need to worry about canning more this year sooo woo hoo almost done and ready for winter. Thanks Maxine and Mark Alleman, we love you!! Next year I am going to make apple sauce too but too pooped this year!!
